Ingredients
The Patties
1 lb ground beef (80/20 for maximum juiciness)
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp salt and black pepper
The Fillings & Toppings
4 oz fresh Mozzarella (sliced or shredded)
12–16 slices pepperoni
1/2 cup pizza sauce (thick style is best)
4 brioche or sesame seed buns, toasted
Instructions
1. Season the Beef
In a large mixing bowl, gently combine the ground beef, Italian seasoning, and garlic powder. Avoid over-working the meat, as this can make the burgers tough.
2. Shape the “Pockets”
Divide the beef into 8 thin, equal-sized patties. They should look like large, flat discs.
3. Stuff with Pizza Flavors
On four of the patties, place a small spoonful of pizza sauce (about 1 teaspoon), 3–4 slices of pepperoni, and a thick slice of mozzarella. Leave a clear 1/2-inch border around the edge of the meat.
4. Seal the Burgers
Place the remaining four plain patties on top of the loaded ones. Pinch the edges firmly together to seal the cheese and pepperoni inside. Shape them back into neat rounds and season the outside with salt and pepper.
5. Sear to Perfection
Heat a cast-iron skillet or grill to medium-high heat. Cook the burgers for about 5–6 minutes per side.
Pro Tip: Don’t press down on the patties with a spatula, or the molten cheese might burst out of the sides!
6. Assemble
Lightly toast your buns. Spread a tablespoon of pizza sauce on the bottom bun, place the burger on top, and add an extra slice of pepperoni or a sprinkle of Parmesan if you’re feeling bold.
Flavor Variation
If you prefer a “Supreme” style, try adding finely minced green peppers or sautéed mushrooms directly into the beef mix before shaping the patties.
