**Step 1: Prepare the Dough**
1. Mix flour and salt in a large bowl. Gradually add warm water and oil.
2. Knead for about 10 minutes until the dough is smooth and elastic.
3. Divide into 8 equal balls, cover with a damp cloth, and let them rest for at least **30 minutes**. *Resting is the secret to getting that paper-thin stretch!*
**Step 2: Make the Savory Filling**
1. Sauté the onions in a pan until translucent.
2. Add the chopped spinach. Cook just until wilted, then drain any excess liquid thoroughly. Squeeze it out with your hands once cool to avoid soggy pastry.
3. Mix the spinach and onions with crumbled feta and spices. Set aside.
**Step 3: The Assembly**
1. Whisk the yogurt, milk, egg, and butter together in a small bowl.
2. Roll out a dough ball on a floured surface as thin as possible (nearly translucent).
3. Brush a thin layer of the yogurt glaze over the dough.
4. Sprinkle a line of the spinach mixture along the edge.
5. Roll the dough tightly into a long “log.”
6. Coil the log into a spiral or fold it into the horseshoe shapes seen in your photo.
