Carrot, Apple, and Zucchini Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup grated carrot
  • 1 cup grated zucchini
  • 1 apple, peeled, cored, and grated

Directions:

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, vegetable oil, brown sugar, white sugar, applesauce, and vanilla extract until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the grated carrot, zucchini, and apple.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
