Ingredients:
- 1 1/2 cups creamy peanut butter
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
- 6 cups semisweet chocolate chips
- 2 tablespoons shortening
Directions:
- In a large bowl, mix together the peanut butter, butter, and vanilla until smooth.
- Gradually add the confectioners’ sugar, stirring until well blended. The mixture will be stiff.
- Shape into 1-inch balls and place on a waxed paper-lined baking sheet. Chill for 30 minutes or until firm.
- In a double boiler or microwave, melt the chocolate chips and shortening, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, allowing any excess to drip off. Place back on the waxed paper-lined baking sheet.
- Refrigerate until the chocolate is set.
