Chocolate-Dipped Peanut Butter Balls

Ingredients:

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar
  • 6 cups semisweet chocolate chips
  • 2 tablespoons shortening

Directions:

  1. In a large bowl, mix together the peanut butter, butter, and vanilla until smooth.
  2. Gradually add the confectioners’ sugar, stirring until well blended. The mixture will be stiff.
  3. Shape into 1-inch balls and place on a waxed paper-lined baking sheet. Chill for 30 minutes or until firm.
  4. In a double boiler or microwave, melt the chocolate chips and shortening, stirring until smooth.
  5. Dip each peanut butter ball into the melted chocolate, allowing any excess to drip off. Place back on the waxed paper-lined baking sheet.
  6. Refrigerate until the chocolate is set.
