Cheesy Chicken Roll-Ups

**Ingredients:**
* **Chicken:** Thinly sliced chicken breasts (or pounded thin).
* **Creamy Filling:**
* Cream cheese (softened)
* Sour cream or Greek yogurt
* Shredded cheddar cheese
* Parmesan cheese (grated)
* Ranch seasoning mix (or a blend of garlic powder, onion powder, and dried herbs)
* **Topping/Garnish:** Fresh parsley or green onions (chopped).
* **Oil:** A small amount of olive oil for the pan.
### **Instructions:**
#### **1. Prepare the Filling**
In a medium bowl, combine the softened cream cheese, sour cream (or Greek yogurt), shredded cheddar, parmesan, and your seasoning blend (like ranch mix). Mix until smooth and well-incorporated.
#### **2. Prepare the Chicken**
Lay your chicken breast slices flat on a cutting board. Ensure they are pounded to an even thickness so they cook uniformly.
#### **3. Spread and Roll**
* Spread a generous, even layer of the cream cheese mixture over each piece of chicken.
* Starting from one end, carefully roll the chicken tightly into a spiral/pinwheel shape.
#### **4. Bake**
* Place the chicken rolls upright (seam side down) into a lightly greased round baking pan or casserole dish.
* Drizzle with a little olive oil.
* Bake at **190°C (375°F)** for approximately 25–30 minutes, or until the chicken is fully cooked through and the tops are golden brown and bubbly.
#### **5. Garnish and Serve**
Once out of the oven, sprinkle immediately with freshly chopped parsley or green onions for color and extra flavor. Let them rest for 5 minutes before serving to allow the filling to set.
**Chef’s Tip:** To ensure they hold their shape perfectly while baking, you can secure each roll with a toothpick before placing them in the pan. Just be sure to remove the toothpicks before serving!
