Ingredients:
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 teaspoon ground cinnamon

- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup grated carrot
- 1 cup grated zucchini
- 1 apple, peeled, cored, and grated
Directions:
- Preheat oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- In a large bowl, whisk together whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, vegetable oil, brown sugar, white sugar, applesauce, and vanilla extract until well combined.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the grated carrot, zucchini, and apple.
- Divide the batter evenly among the prepared muffin cups.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
