Fluffy Cotton Cake
Ingredients:
• 4 eggs (separated)
• 100g sugar
• 80g cake flour (sifted)
• 40ml milk
• 40ml vegetable oil
• 1 tsp vanilla extract
• 1/4 tsp salt
• 1/2 tsp cream of tartar (or lemon juice)
Instructions:
1. Preheat oven to 150°C (300°F). Line an 8-inch pan (no grease).
2. Yolk Batter: Whisk yolks, half the sugar, oil, milk, vanilla, and flour until smooth.
3. Meringue: Beat egg whites with cream of tartar, adding the rest of the sugar gradually, until soft peaks form.
4. Mix: Fold the meringue into the yolk mixture gently.
5. Bake: Pour batter into the pan, tap to remove bubbles, and bake in a water bath for 70-75 minutes.
6. Cool: Let cool, then remove from the pan.
Soft, fluffy, and delicious!
