Cabbage with eggs breakfast

Ingredients:

2 cups of shredded cabbage

2 large eggs

1 small onion, finely chopped (optional)

1 tablespoon olive oil or butter

Salt and pepper, to taste

A pinch of paprika or chili flakes (optional)

Fresh herbs like parsley or chives for garnish

Instructions:

1. Prepare the cabbage: Wash and shred the cabbage into thin strips if not already prepared.

2. Sauté the cabbage:Warm a skillet over medium heat and add olive oil or butter until it melts and coats the surface.Add the chopped onion (if using) and sauté for 1-2 minutes until softened.Add the shredded cabbage, season with salt, and cook for about 5 minutes, stirring occasionally, until the cabbage softens and slightly caramelizes.

3. Add the eggs:Move the cooked cabbage to one side of the pan, creating space for the next step. Crack the eggs into the empty side and scramble them lightly with a spatula.Mix the scrambled eggs with the cabbage once the eggs are almost set.

4. Season: Sprinkle with pepper, paprika, or chili flakes (if you like a bit of heat).

5. Serve: Transfer to a plate, garnish with fresh herbs, and enjoy while hot.

This dish pairs well with toast or avocado slices for a hearty breakfast!
