Ingredients:
- 1 cup white sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk
- 3 large egg yolks, beaten
- 2 tablespoons butter
- 1 1/2 teaspoons vanilla extract
- 4 bananas, sliced
- 1 (12 ounce) package vanilla wafers
- 4 large egg whites
- 1/4 cup white sugar
Directions:
- Preheat oven to 350°F (175°C).
- In a medium saucepan, combine 1 cup sugar, flour, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Reduce heat to low and cook for 2 more minutes. Remove from heat.
- In a small bowl, beat the egg yolks. Gradually whisk in 1/2 cup of the hot mixture, then return the egg yolk mixture to the saucepan. Cook for 2 more minutes, stirring constantly. Remove from heat and stir in butter and vanilla.
- Spread a small amount of the custard on the bottom of a 2-quart baking dish. Cover with a layer of vanilla wafers, followed by a layer of banana slices. Pour about 1/3 of the custard over the bananas. Continue layering wafers, bananas, and custard, ending with custard.
- In a large bowl, beat the egg whites on high speed until soft peaks form. Gradually add 1/4 cup sugar, beating until stiff peaks form. Spread the meringue over the pudding, sealing to the edges of the dish.
- Bake in the preheated oven for 15 minutes, or until the meringue is lightly browned. Cool slightly, then refrigerate until ready to serve.
