Classic Banana Pudding Delight

Ingredients:

  • 1 cup white sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 1/2 teaspoons vanilla extract
  • 4 bananas, sliced
  • 1 (12 ounce) package vanilla wafers
  • 4 large egg whites
  • 1/4 cup white sugar

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine 1 cup sugar, flour, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Reduce heat to low and cook for 2 more minutes. Remove from heat.
  3. In a small bowl, beat the egg yolks. Gradually whisk in 1/2 cup of the hot mixture, then return the egg yolk mixture to the saucepan. Cook for 2 more minutes, stirring constantly. Remove from heat and stir in butter and vanilla.
  4. Spread a small amount of the custard on the bottom of a 2-quart baking dish. Cover with a layer of vanilla wafers, followed by a layer of banana slices. Pour about 1/3 of the custard over the bananas. Continue layering wafers, bananas, and custard, ending with custard.
  5. In a large bowl, beat the egg whites on high speed until soft peaks form. Gradually add 1/4 cup sugar, beating until stiff peaks form. Spread the meringue over the pudding, sealing to the edges of the dish.
  6. Bake in the preheated oven for 15 minutes, or until the meringue is lightly browned. Cool slightly, then refrigerate until ready to serve.
