Ingredients:
- 20 jumbo pasta shells
 - 1 lb ground beef
 - 8 oz mushrooms, chopped
 - 1 onion, finely chopped
 - 2 cloves garlic, minced
 - 1 cup ricotta cheese
 - 1 cup mozzarella cheese, shredded
 - 1/2 cup Parmesan cheese, grated
 - 2 cups marinara sauce
 - 2 tbsp olive oil
 - 1 tsp dried oregano
 - 1 tsp dried basil
 - Salt and pepper to taste
 
Directions:
- Preheat oven to 375°F (190°C).
 - Cook pasta shells according to package directions. Drain and set aside.
 - In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
 - Add ground beef, cook until browned. Add mushrooms, cook until tender.
 - Stir in oregano, basil, salt, and pepper. Remove from heat.
 - In a large bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, and 1/4 cup Parmesan cheese.
 - Add the beef and mushroom mixture to the cheese mixture, stir to combine.
 - Stuff each pasta shell with the beef and mushroom mixture and place in a baking dish.
 - Pour marinara sauce over the stuffed shells. Sprinkle with remaining mozzarella and Parmesan cheese.
 - Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
