Ingredients
3 ½ cups (about 25 oz) pitted black cherries 🍒
2 cups granulated sugar 🍬
8 teaspoons lemon juice 🍋
1 teaspoon vanilla extract or vanilla paste 🌼
4 teaspoons Amaretto almond liqueur 🍸
1 teaspoon butter (optional, reduces foaming) 🧈
Instructions
- Prepare Your Jars
Sterilize jars and lids to hold about 1 ½ pounds of jam. Set them aside to cool.
- Cook the Cherries
Roughly chop the cherries and place them in a heavy-bottomed pot. Add the sugar and lemon juice. Stir to combine.
- Simmer the Mixture
Cook over medium heat, stirring frequently, for 10–15 minutes, until the sugar dissolves and the cherries soften.
- Optional: Blend for Texture
If desired, use an immersion blender to pulse the mixture a couple of times, leaving some fruit chunks for texture.
- Add the Flavor
Stir in the Amaretto and vanilla, ensuring everything is well combined.
- Boil to Set the Jam
Increase the heat to medium-high. Bring the mixture to a boil and cook until it reaches 221°F (105°C) on a food thermometer. This ensures the jam will set properly.
- Final Touches
Remove from heat. Stir in the butter if using — this helps reduce foaming. Let the jam cool slightly for about 10 minutes.
- Fill the Jars
Carefully pour the jam into the sterilized jars. Optionally, top with a piece of wax paper. Seal the jars tightly, invert them for a few minutes, then allow them to cool completely.
