Savory Grilled Garlic Parmesan Scallops

Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 pound sea scallops

Directions:

  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. In a medium bowl, whisk together the olive oil, lemon juice, garlic, basil, salt, and black pepper. Stir in the Parmesan cheese.
  3. Rinse the scallops and pat dry. Toss the scallops in the olive oil mixture until well coated.
  4. Thread the scallops onto skewers.
  5. Grill the scallops on the preheated grill for about 2-3 minutes per side, or until they are opaque and the cheese is browned.
  6. Serve hot with lemon wedges if desired.
