Cinnamon Pecan French Toast Cookies

Ingredients:

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups quick-cooking oats
  • 1 cup chopped pecans
  • 1/2 cup maple syrup

Directions:

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking soda, cinnamon, and salt; stir into the creamed mixture until just blended. Mix in the oats and pecans.
  4. Drop by heaping teaspoonfuls onto the prepared baking sheets.
  5. Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Cool on wire racks.
  6. While the cookies are cooling, drizzle them with maple syrup for an extra touch of sweetness.
