Garlic Shrimp Crostini with Avocado
Ingredients:
1 baguette, sliced into ½-inch thick rounds
2 tablespoons olive oil, divided
1 pound shrimp, peeled and deveined
4 cloves garlic, minced
1 teaspoon smoked paprika
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
1 large avocado, peeled, pitted, and mashed
1 tablespoon lime juice
¼ cup fresh cilantro, chopped
¼ teaspoon red pepper flakes (optional)
Instructions:
1. Toast the baguette:
Preheat your oven to 400°F (200°C).
Arrange the baguette slices on a baking sheet and brush both sides lightly with 1 tablespoon of olive oil.
Toast for 5-7 minutes until golden and crisp. Remove from the oven and set aside.
2. Cook the shrimp:
Heat the remaining tablespoon of olive oil in a large skillet over medium heat.
Add the minced garlic and sauté until fragrant (about 30 seconds).
Stir in the shrimp, smoked paprika, salt, and black pepper.
Cook for 2-3 minutes per side until the shrimp turn pink and opaque. Remove from heat.
3. Prepare the avocado spread:
In a bowl, mash the avocado until smooth.
Mix in the lime juice, cilantro, and a pinch of salt and pepper to taste.
4. Assemble the crostini:
Spread a generous layer of avocado mixture on each toasted baguette slice.
Top each slice with 1-2 shrimp.
Sprinkle with red pepper flakes if you like a little heat.
5. Serve & enjoy:
Arrange the crostini on a platter and serve immediately.
