Pistachio Cake with Chocolate Glaze
Ingredients
For the Pistachio Cake:
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
½ cup whole milk
1 teaspoon vanilla extract
½ teaspoon almond extract (optional)
½ cup finely ground pistachios
For the Chocolate Glaze:
½ cup heavy cream
4 oz dark chocolate, chopped
1 tablespoon unsalted butter
1 teaspoon honey or corn syrup (for shine)

Instructions
1. Prepare the Cake Batter
1. Preheat your oven to 350°F (175°C). Grease
your cake pan and line it with parchment paper.
2. In a bowl, whisk together the flour, baking powder, salt, and ground pistachios. Set aside.
3. In a large mixing bowl, beat the butter and sugar until light and fluffy.
4. Add the eggs, one at a time, mixing well after each addition.
5. Mix in the vanilla extract and almond extract (if using).
6. Gradually add the dry ingredients in batches, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

1. Pour the batter into the prepared cake pan and smooth the top.
