Cheese Soup

Cheese Soup 🥘

✍️ Ingredients:

Potatoes – 500 g

Carrot (medium) – 1 pc

Onion (small) – 1 pc

Garlic (small clove) – 1 pc

Mushrooms – 250 g

Chicken breast – 400 g

Processed cheese – 200 g

Water – 1.5 l

Salt – 1/2 tbsp

Preparation:

1️⃣ Slice the onion and carrot into quarter-rings, and cut the potatoes into large cubes.
2️⃣ Heat some vegetable oil in a pot and sauté the onion and carrot over medium heat until the onion becomes translucent.
3️⃣ After about 10 minutes, add the potatoes and simmer everything together for another 5 minutes.
4️⃣ Pour in hot water and cook until the vegetables are soft (~30 minutes).
5️⃣ Meanwhile, dice the mushrooms and sauté them in vegetable oil until they release their juices, then slightly brown them. Set aside.
6️⃣ Cut the chicken into cubes and pan-fry it until golden brown.
7️⃣ Once the potatoes are cooked, add salt and blend the soup until smooth.
8️⃣ Stir in the cheese and mix until fully melted.
9️⃣ Add the sautéed mushrooms and chicken to the soup.
