Grated Pie or Viennese Cookies 🥮

✍️ Ingredients:

Butter – 180 g

Sugar – 100 g

A pinch of salt

Eggs – 2 pcs

Flour – 400 g

Baking powder – 0.5 tsp

Jam or preserves – 300 g

Preparation:

1. Beat the softened butter with sugar and salt until fluffy.

2. Add the eggs one at a time, mixing well after each addition.

3. Sift half of the flour with the baking powder into the mixture and beat until smooth.

4. Add the remaining flour and quickly knead the dough by hand. It should be soft.

5. If the dough is sticky, add a little more flour.

6. Divide the dough into two parts, wrap them in plastic wrap.

7. Place one part in the freezer and the other in the fridge.

8. After a few hours, spread the chilled dough into a baking pan (26 cm), forming edges.

9. Spread a thick, seedless jam on top.

10. Grate the frozen dough over the jam to cover the surface.

11. Bake in a preheated oven at 180°C (350°F) for about 30 minutes.
