Ingredients
For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1½ cups granulated sugar
- 3 large eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- ½ cup chopped walnuts (optional)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pineapple chunks and shredded carrots for garnish (optional)
Instructions
1. Prepare the Cake:
Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, beat the sugar, eggs, oil, and vanilla until smooth and well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Gently fold in the grated carrots, crushed pineapple, and walnuts if using.
Pour the batter evenly into the prepared baking pan.
2. Bake:
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely in the pan before frosting.
3. Make the Cream Cheese Frosting:
In a large bowl, beat the cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until fluffy and spreadable.
4. Frost & Garnish:
Spread the frosting evenly over the cooled cake.
Garnish with pineapple chunks and shredded carrots if desired for a fun, tropical touch.
Tips for Success:
✅ Be sure to drain the pineapple well to avoid excess moisture.
✅ For extra flavor, lightly toast the walnuts before adding them.
✅ Store leftovers in the fridge for up to 5 days — the cake gets even better the next day!
