50 ml fresh lemon juice (about 1–2 lemons)
30 g fresh ginger, peeled and finely grated
100 g granulated sugar
100 ml water
1 tbsp soy sauce
1 tsp cornstarch
1 tbsp cold water (to dissolve cornstarch)

🔪 Instructions:
Step 1: Create the Base
In a small saucepan, combine the lemon juice, grated ginger, sugar, and water.
Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
Step 2: Flavor & Thicken
Once simmering, stir in the soy sauce.
In a separate bowl, dissolve the cornstarch in 1 tbsp cold water until smooth.
Slowly pour the slurry into the saucepan while stirring continuously.
Step 3: Simmer to Perfection
Continue cooking for 2–3 minutes, stirring gently, until the sauce thickens to a silky consistency.
Remove from heat and let it cool slightly.
