🍯 Honey Lavender Ice Cream 🌸
A luxuriously creamy ice cream infused with delicate lavender and sweet honey. A perfect blend of floral and rich flavors for a sophisticated treat!
Ingredients:
2 cups heavy cream
1 cup whole milk
½ cup honey (plus extra for drizzling)
1 ½ tablespoons dried culinary lavender (not too much to avoid bitterness)
4 large egg yolks (for a silkier texture)
¼ teaspoon vanilla extract
Pinch of salt (enhances flavors)
—
Instructions:
Step 1: Infuse the Cream
1. In a medium saucepan, combine heavy cream, whole milk, honey, and lavender.
2. Heat gently over medium-low heat until it just begins to steam (avoid boiling). Stir occasionally.
3. Remove from heat, cover, and let it steep for 15 minutes for a mild floral essence.
4. Strain through a fine-mesh sieve to remove lavender. Press gently to extract all the infused flavor.
Step 2: Prepare the Custard
1. In a bowl, whisk egg yolks and salt until smooth and slightly thickened.
2. Slowly drizzle a small amount of the warm cream mixture into the yolks, whisking constantly (this prevents scrambling).
3. Pour the tempered yolks back into the saucepan with the rest of the cream mixture.
4. Cook over low heat, stirring continuously with a spatula, until it thickens slightly and coats the back of the spoon (170–175°F).
Step 3: Add Vanilla & Chill
1. Remove from heat and stir in vanilla extract.
2. Pour custard into a bowl, cover the surface with plastic wrap, and chill for at least 4 hours (or overnight) for the best texture.
Step 4: Churn & Freeze
1. Pour the cold custard into your ice cream maker and churn according to its instructions.
2. Transfer to an airtight container and freeze for at least 3 hours for a firmer texture.
