These crispy tuna cakes combine the deliciously savory flavor of tuna with the umami of soy sauce, fresh ginger, and garlic, all encased in crunchy breadcrumbs. Ingredients:

2 (5 oz) cans tuna, drained

½ cup breadcrumbs or panko

1 egg

2 green onions, finely chopped

1 tbsp soy sauce

1 tsp fresh ginger, grated

1 clove garlic, minced

1 tsp sesame oil

2 tbsp vegetable oil (for frying)

For the Spicy Mayo:

¼ cup mayonnaise

1 tbsp sriracha sauce

½ tsp lemon juice (optional, for added brightness)

Directions:

1. In a bowl, combine the drained tuna, breadcrumbs, egg, green onions, soy sauce, ginger, garlic, and sesame oil. Mix until well combined.

2. Shape the mixture into patties, making sure they’re compact so they hold together while frying.

3. Heat vegetable oil in a skillet over medium heat. Once hot, add the patties and cook for 3-4 minutes per side, or until golden and crisp.

4. For the spicy mayo, mix together mayonnaise, sriracha, and lemon juice in a small bowl.

5. Serve the tuna cakes with a drizzle of spicy mayo on top or use it as a dipping sauce.
