Ingredients:
4 boneless, skinless chicken breasts
1 tbsp olive oil
2 tbsp butter
3 garlic cloves, minced
1 cup mushrooms, sliced
2 cups fresh spinach
1 cup heavy cream
½ cup chicken broth
¼ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt & black pepper, to taste
Optional: Crispy turkey bacon or red pepper flakes for garnish
Instructions:
1️⃣ Season & Sear the Chicken – Sprinkle salt and pepper over the chicken breasts. Heat olive oil in a large skillet over medium heat and cook the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
2️⃣ Sauté Garlic & Mushrooms – In the same pan, melt butter and sauté garlic for 30 seconds. Add mushrooms and cook until tender, about 3-4 minutes.
3️⃣ Make the Sauce – Pour in the chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, stirring occasionally, until the sauce thickens slightly.
4️⃣ Add Spinach & Chicken – Stir in spinach and cook until wilted. Return the chicken to the skillet and spoon the creamy sauce over it. Let it simmer for 2-3 minutes to absorb the flavors.
