Ingredients:
Meatloaf:
1 ½ lbs ground meatloaf mix (beef, pork, veal)
1 large caramelized onion
1 egg
4 cloves garlic, minced
¼ cup fresh parsley, chopped
2 tbsp fresh thyme, chopped
¼ cup milk
1 tbsp Worcestershire sauce
½ cup breadcrumbs
½ cup Gruyère cheese, grated
½ tsp salt
¼ tsp black pepper
Gravy:
1 tbsp olive oil
2 tbsp butter
2 large sweet onions, thinly sliced
3 tbsp all-purpose flour
2 cups beef broth
2 tbsp Worcestershire sauce
1 cup Gruyère cheese, shredded
1 tbsp fresh parsley, chopped
Salt and black pepper to taste
Instructions:
1️⃣ Caramelize the onions: In a skillet over low heat, melt butter with olive oil. Add sliced onions and cook for about 40-45 minutes, stirring occasionally, until deeply golden. Set aside half for the meatloaf.
2️⃣ Make the gravy: Stir flour into the remaining onions and cook for 1 minute. Gradually whisk in beef broth and Worcestershire sauce. Simmer until thickened. Stir in Gruyère cheese and parsley. Season with salt and pepper. Keep warm.
3️⃣ Prepare the meatloaf: Preheat oven to 350°F (175°C). In a large bowl, mix ground meat, reserved caramelized onions, egg, garlic, parsley, thyme, milk, Worcestershire sauce, breadcrumbs, cheese, salt, and pepper until just combined.
4️⃣ Shape & bake: Form into a loaf on a parchment-lined baking sheet. Bake for 55-60 minutes or until cooked through.
5️⃣ Serve: Slice meatloaf and spoon the rich onion gravy over the top. Enjoy with mashed potatoes or roasted veggies!
