Ingredients
Dark Chocolate Layer:
200g dark chocolate, melted and cooled
2 large eggs, separated
50g sugar
100ml heavy cream
Milk Chocolate Layer:
200g milk chocolate, melted and cooled
2 large eggs, separated
50g sugar
100ml heavy cream
White Chocolate Layer:
200g white chocolate, melted and cooled
2 large eggs, separated
50g sugar
100ml heavy cream
1 tsp vanilla extract
A pinch of salt
Instructions
1. Prepare the Dark Chocolate Mousse:
Whisk the egg whites with 50g sugar until stiff peaks form.
In another bowl, whip the heavy cream until soft peaks form.
Gently fold the cooled melted dark chocolate into the egg yolks.
Carefully fold in the whipped egg whites, then the whipped cream.
2. Assemble the First Layer:
Pour the dark chocolate mousse into a cake mold and smooth the top.
Refrigerate while preparing the next layer.
3. Repeat for Milk and White Chocolate Layers:
Follow the same steps for the milk and white chocolate layers, allowing each layer to firm up in the fridge for at least 15 minutes before adding the next.
4. Final Set:
Once fully assembled, refrigerate the cake for at least 4 hours (or overnight for best results).
