8 medium fresh beets
1 cup vinegar (white or apple cider)
½ cup sugar
1½ tsp whole cloves
1½ tsp whole allspice
½ tsp salt

Instructions
1️⃣ Cook the Beets
1. Scrub the beets clean and trim the tops, leaving about 1 inch of stem to prevent bleeding.
2. Place beets in a large pot or Dutch oven, adding enough water to cover them.
3. Bring to a boil, then reduce heat and simmer, covered, for 25-30 minutes or until fork-tender.
4. Remove from water and let cool. Once cool enough to handle, peel the skins off (they should slide off easily). Slice beets into rounds or wedges and place them in a bowl.

1. In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt.

1. Pour the hot pickling liquid over the sliced beets, ensuring they are fully submerged.
2. Let cool slightly, then cover and refrigerate for at least 1 hour (for best flavor, refrigerate overnight).
