Creamy Garlic Parmesan Chicken with Spinach & Mushrooms
Ingredients:
4 boneless, skinless chicken breasts (or thighs)
Salt and black pepper, to taste
1 teaspoon garlic powder
½ teaspoon smoked paprika
2 tablespoons olive oil
2 tablespoons unsalted butter
1 small onion, finely chopped
4 cloves garlic, minced
2½ cups mushrooms, sliced
3 cups fresh spinach
¾ cup heavy cream
½ cup chicken broth (or white wine for extra depth)
¾ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon crushed red pepper flakes (optional)
1 teaspoon Dijon mustard (adds a subtle tang)
Fresh parsley, chopped (for garnish)
Instructions:
1. Season the chicken: Pat the chicken dry and season both sides with salt, black pepper, garlic powder, and smoked paprika.
2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 5-7 minutes per side, until golden brown and cooked through. Remove and set aside.
3. Sauté the aromatics: Reduce heat to medium. In the same skillet, add butter and sauté the onion for 3 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.
4. Cook the mushrooms: Add mushrooms and cook for 5 minutes until they release their moisture and start browning.
5. Wilt the spinach: Stir in the spinach and cook until wilted, about 1-2 minutes.
6. Make the sauce: Pour in the heavy cream and chicken broth (or wine). Stir in the Parmesan cheese, Italian seasoning, Dijon mustard, and red pepper flakes. Let the sauce simmer for 4-5 minutes until slightly thickened.
7. Combine everything: Return the chicken to the skillet, spooning the sauce over the top. Simmer for 2-3 more minutes to heat through.
8. Garnish & serve: Sprinkle with fresh parsley and serve with rice, pasta, or crusty bread.
