For the Dough:

2 1/4 cups all-purpose flour

2 1/4 cups bread flour

1/2 cup white sugar

1 tsp vinegar (secret ingredient for a whiter dough)

A pinch of salt

1 tbsp baking powder

3 tbsp lard

1 1/2 cups lukewarm water

2 tbsp white sugar

1 tsp dried instant or active yeast

Instructions:

1. Activate the yeast – In a small bowl, dissolve 2 tbsp sugar in lukewarm water. Sprinkle the yeast over the water, stir lightly, and let it sit for 5–10 minutes until foamy.

2. Prepare the dough – In a large mixing bowl, combine all-purpose flour, bread flour, salt, and baking powder. Mix well.

3. Incorporate the yeast mixture – Pour the activated yeast into the flour mixture. Add vinegar and lard. Mix until a dough forms.

4. Knead the dough – Transfer the dough to a lightly floured surface and knead for 10–15 minutes until smooth and elastic.

5. First rise – Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1–2 hours or until doubled in size.

6. Divide and shape – Punch down the dough and divide it into equal portions. Flatten each piece, fill with your desired filling (pork, chicken, or asado), and seal by pinching the edges together.

7. Final rise – Arrange the filled buns on parchment paper squares, cover them with a cloth, and let them rise for another 30 minutes.

8. Steam the siopao – Prepare a steamer with boiling water. Steam the siopao over medium heat for 15–20 minutes.

9. Serve and enjoy! – Let the siopao cool slightly before serving. Enjoy your homemade siopao!
