🛒 Ingredients

For the Steak Tips:

400g sirloin steak, cut into bite-sized cubes

2 tbsp olive oil

3 tbsp unsalted butter

4 garlic cloves, minced

1 tsp paprika

1 tsp dried thyme

Salt and black pepper, to taste

1 tbsp fresh parsley, chopped (for garnish)

For the Rigatoni & Sauce:

300g rigatoni pasta

2 tbsp olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

½ tsp red pepper flakes (optional)

Salt and black pepper, to taste

½ cup reserved pasta water

👨‍🍳 Instructions

1️⃣ Cook the Rigatoni:

Boil the rigatoni in salted water until al dente.

Reserve ½ cup of pasta water before draining.

2️⃣ Prepare the Steak Tips:

Pat steak cubes dry and season with salt, black pepper, paprika, and thyme.

Heat olive oil in a skillet over medium-high heat. Add steak cubes and sear for 2-3 minutes per side until golden brown. Remove and set aside.

Lower heat to medium, melt butter in the same skillet, and sauté garlic for 1 minute until fragrant.

Return steak tips, tossing them in the garlic butter sauce. Set aside and keep warm.

3️⃣ Make the Cheesy Sauce:

Heat olive oil in a separate skillet over medium heat. Sauté onions for 3-4 minutes until soft.

Add garlic and cook for another minute.

Stir in heavy cream, mozzarella, Parmesan, red pepper flakes (if using), salt, and black pepper.

Simmer for 3-4 minutes, stirring until the cheese melts into a creamy sauce.

Gradually add reserved pasta water to adjust the sauce’s consistency.

4️⃣ Combine & Serve:

Toss the cooked rigatoni in the cheesy sauce until fully coated.

Plate the pasta and top with garlic butter steak tips.

Sprinkle with fresh parsley and serve hot!
