goat cheese salad with balsamic butter
Ingredients
300 g goat cheese
0.25 cup pumpkin seeds
60 g butter
1 tablespoon balsamic vinegar
90 g young spinach

1. Preheat the oven to 200°C (400°F).
2. Place the goat cheese slices in a greased baking dish and bake for 10 minutes.
3. While the goat cheese is in the oven, toast the pumpkin seeds in a dry frying pan over a fairly high temperature until they turn color and begin to pop.
4. Reduce heat, add butter and simmer until golden brown and nutty. Add balsamic vinegar and simmer for a few more minutes. Turn off heat.
5. Spread the baby spinach on a plate. Place the cheese on top and add the balsamic butter.
