Refreshing Marinated Vegetable Salad

Ingredients:

  • 3 medium cucumbers, sliced
  • 1 large onion, sliced and separated into rings
  • 3 large tomatoes, cut into wedges
  • 1/2 cup vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried basil

Directions:

  1. In a large bowl, combine cucumbers, onions, and tomatoes.
  2. In a small bowl, whisk together vinegar, vegetable oil, water, sugar, salt, pepper, and basil until well blended.
  3. Pour the dressing over the vegetables and toss to coat.
  4. Cover and refrigerate for at least 2 hours before serving, stirring occasionally.
