Hearty Kale and Vegetable Soup

Ingredient

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes
  • 2 potatoes, peeled and cubed
  • 1 (15 ounce) can white beans, drained and rinsed
  • 4 cups chopped kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add carrots and celery, and cook for about 5 minutes.
  3. Pour in vegetable broth and diced tomatoes. Stir in potatoes, white beans, thyme, and basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add kale and simmer for an additional 10 minutes, or until vegetables are tender. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
