Ingredient
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 4 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes
- 2 potatoes, peeled and cubed
- 1 (15 ounce) can white beans, drained and rinsed
- 4 cups chopped kale
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
- Add carrots and celery, and cook for about 5 minutes.
- Pour in vegetable broth and diced tomatoes. Stir in potatoes, white beans, thyme, and basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add kale and simmer for an additional 10 minutes, or until vegetables are tender. Season with salt and pepper to taste.
- Serve hot and enjoy!
