Savory Stuffed Shells with Beef and Mushrooms

Ingredients:

  • 20 jumbo pasta shells
  • 1 lb ground beef
  • 8 oz mushrooms, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta shells according to package directions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  4. Add ground beef, cook until browned. Add mushrooms, cook until tender.
  5. Stir in oregano, basil, salt, and pepper. Remove from heat.
  6. In a large bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, and 1/4 cup Parmesan cheese.
  7. Add the beef and mushroom mixture to the cheese mixture, stir to combine.
  8. Stuff each pasta shell with the beef and mushroom mixture and place in a baking dish.
  9. Pour marinara sauce over the stuffed shells. Sprinkle with remaining mozzarella and Parmesan cheese.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
