Soft and Chewy Zucchini Cookies

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup rolled oats
  • 1 cup chopped walnuts (optional)
  • 1 cup chocolate chips (optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until fluffy.
  3. Stir in the grated zucchini.
  4. In a separate bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the zucchini mixture until just combined. Stir in the oats, walnuts, and chocolate chips if using.
  5. Drop by rounded teaspoonfuls onto the prepared baking sheets.
  6. Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Cool on wire racks.
