Homemade KFC Chicken

Ingredients (Serves 5-6)

10 chicken pieces (legs and thighs with skin)
5 tablespoons cornstarch
1 tablespoon minced garlic
1 cup evaporated milk
1 tablespoon mustard
2 eggs
2 cups wheat flour
1 tablespoon chicken or meat seasoning
Salt and black pepper, to taste
Oil for frying

Instructions

Season and Prep Chicken
Wash and pat dry the chicken pieces thoroughly. Generously season with salt and black pepper.
Parboil the Chicken
Put the seasoned chicken into a large pot and add enough water to partially submerge it. Cover with a lid and simmer over low heat for about 10 minutes. Remove from the heat and drain, letting the chicken cool slightly.
Prepare Coating Mixtures
Combine wheat flour, cornstarch, minced garlic, and chicken seasoning in a bowl. Stir well to distribute the flavors.
In another bowl, whisk the evaporated milk, eggs, mustard, salt, and pepper until smooth.
Coat the Chicken
Dip each piece of chicken into the flour mixture first, ensuring an even coating. Next, dip it into the milk mixture, then coat it again in the flour mixture for a second layer.Place the coated chicken on a tray and chill in the refrigerator for 10-15 minutes .
Heat Oil
Heat enough oil over medium heat in a large skillet or deep pot to submerge the chicken pieces. The oil is ready when a small pinch of flour sizzles when it hits the surface.
Fry the Chicken
Fry 2-3 pieces of chicken at a time to prevent overcrowding. Cook the chicken until it is golden brown on all sides and fully cooked, about 10-12 minutes per batch. Transfer the fried chicken to a plate lined with paper towels to absorb the excess oil.
Serve and Enjoy
Allow the chicken to rest for a couple of minutes before serving.Pair it with your favorite sides like coleslaw, mashed potatoes, or biscuits to complete the meal
