Ingredients:
• 3 large eggplants, peeled and thinly sliced
• 2 large eggs, beaten
• 4 cups Italian-seasoned bread crumbs
• 6 cups spaghetti sauce, divided
• 16 oz shredded mozzarella cheese, divided
• ½ cup grated Parmesan cheese, divided
• ½ teaspoon dried basil
Instructions:
1️⃣ Preheat the Oven:
Preheat your oven to 350°F (175°C).
2️⃣ Bread the Eggplant:
• Dip each eggplant slice into the beaten eggs, ensuring an even coating on both sides.
• Press the slices into the Italian-seasoned bread crumbs until fully coated.
3️⃣ Bake the Eggplant:
• Arrange the breaded slices in a single layer on a baking sheet.
• Bake for 5 minutes, then flip and bake for another 5 minutes until lightly browned.
