Shrimp Ceviche & Fresh Tomato Salsa & Guacamole

My Go-To Savory Appetizers for Super Bowl Weekend

1. Shrimp Ceviche

2 cups cooked shrimp, chopped

Juice of 3 fresh limes

2 Roma tomatoes, diced

1 medium red onion, diced

2 medium jalapeños, diced

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Mix all ingredients in a bowl, chill for 30 minutes, and serve with tortilla chips.

2. Fresh Tomato Salsa

4 Roma tomatoes, diced

2 jalapeños, finely diced

1 medium onion, diced

Juice of 2 limes

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Combine ingredients in a bowl, stir well, and let sit for 15 minutes before serving.

3. Guacamole

2 large Hass avocados, mashed

1/2 red onion, finely diced

1 jalapeño, finely diced

Juice of 2 limes

1/4 cup fresh cilantro, diced

1 garlic clove, minced

Salt and pepper, to taste

Mash avocados, mix in the rest of the ingredients, and serve immediately with chips or veggies.
