Creamy Potato Salad with Eggs

For the Dressing:

½ cup mayonnaise

2 tablespoons mustard

2 tablespoons white vinegar

Salt, to taste

½ cup olive oil (or more if needed)

Black pepper, to taste

2 tablespoons chopped parsley

1 garlic clove, grated

Whisk all the dressing ingredients together until smooth and creamy.

For the Salad:

3 hard-boiled eggs, sliced

5 boiled potatoes, cut into medium rounds

1 large fresh tomato, diced

Thinly sliced red onion

Avocado (optional)

Combine the potatoes, tomato, onion, and avocado (if using) in a large bowl. Drizzle with the dressing and toss gently. Add the eggs on top and give it a final, light toss. Serve immediately or chill before serving for extra flavor!
