HOMEMADE MAYONNAISE

Once you make this, you may never go back to store-bought again! So creamy, fresh, and made with simple ingredients.

INGREDIENTS:

• 1 large egg (room temperature)
• 1 cup light oil (vegetable, canola, or avocado oil)
• 1 tablespoon lemon juice or white vinegar
• 1 teaspoon Dijon mustard (optional but adds flavor)
• ¼ teaspoon salt

INSTRUCTIONS:

1. Add the egg, lemon juice (or vinegar), mustard, and salt into a tall jar or cup.
2. Pour the oil in on top.
3. Place an immersion blender at the bottom of the jar.
4. Turn it on and hold still for a few seconds—watch it thicken!
5. Slowly lift the blender to mix the rest until smooth and creamy.

• Use room temperature ingredients for best results
• Store in the fridge for up to 1 week
• Add garlic for aioli or a pinch of paprika for extra flavor
