Ingredients:
– 1 lb large shrimp, peeled & deveined
– 1/2 cup cream cheese, softened
– 1 cup shredded mozzarella
– 1 tbsp fresh parsley, chopped
– 1/2 tsp garlic powder
– Salt & pepper to taste
– 8 egg roll wrappers or spring roll sheets
– 1 egg (for sealing)
– 1/2 cup all-purpose flour
– 1 cup panko breadcrumbs
– Vegetable oil for frying
Directions:
1. Lightly sauté shrimp in a pan with salt, pepper, and garlic powder until just pink (about 2–3 minutes). Set aside.
2. In a bowl, combine cream cheese, mozzarella, parsley, and cooked shrimp (chopped if preferred).
3. Spoon filling onto wrappers, roll tightly, and seal with egg wash.
4. Dredge each roll in flour, dip in egg, and coat in panko. Fry in hot oil (350°F) for 3–4 minutes until golden and crispy.
5. Plate with your favorite dipping sauce—garlic aioli, spicy mayo, or ranch. Enjoy!
