Zesty Cranberry Orange Scones

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 3/4 cup dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 tablespoon white sugar, or as needed

Directions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  3. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the dried cranberries and orange zest.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a lightly floured surface and knead gently a few times. Pat the dough into a 1-inch thick circle.
  7. Cut the dough into 8 wedges and place on the prepared baking sheet. Brush the tops with milk and sprinkle with 1 tablespoon sugar.
  8. Bake in the preheated oven until the scones are golden brown, about 15-20 minutes. Serve warm.
