Creamy Fruit & Milk Pudding (Gelatin-Free)

Ingredients:

2 cups mixed fresh fruit (e.g., strawberries, mango, blueberries)

1 ½ cups whole milk

½ cup heavy cream

¼ cup honey or sugar (adjust to taste)

1 ½ tbsp cornstarch

1 tsp vanilla extract

A pinch of salt

Instructions:

1. In a small bowl, mix the cornstarch with 3 tbsp of cold milk to create a slurry.

2. In a saucepan, heat the remaining milk, heavy cream, honey (or sugar), vanilla extract, and a pinch of salt over medium heat. Stir occasionally until warm but not boiling.

3. Slowly whisk in the cornstarch slurry, stirring constantly to avoid lumps. Cook for about 5 minutes until the mixture thickens into a smooth pudding consistency.

4. Remove from heat and let it cool slightly. Transfer to serving bowls and refrigerate for at least 1-2 hours until set.

5. Once chilled, top with fresh fruit and gently mix if desired.

6. Serve as is or garnish with a drizzle of honey or shredded coconut for extra flavor.
