6 Ways to Make Alfredo Sauce
1. Vegan Cauliflower Alfredo Sauce
• Ingredients:
• 4 garlic cloves, minced
• 1 tbsp butter
• 2 cups cauliflower florets
• 3 cups vegetable broth or water
• 1/2 tsp salt
• 1/4 tsp pepper
• 1/4 cup milk
• Method:
1. Sauté garlic in butter until fragrant, set aside.
2. In a large pot, bring vegetable broth or water to a boil. Add cauliflower and cook for 7-10 minutes until tender.
3. Transfer cauliflower to a blender, add garlic butter, vegetable broth, salt, pepper, and milk. Blend until smooth.
4. Add water or milk if the sauce appears too thick. Serve with fettuccine.
2. Alfredo Sauce with Cream Cheese
• Ingredients:
• 1/2 cup unsalted butter (1 stick)
• 6 garlic cloves, minced (or garlic powder)
• 1/3 cup grated parmesan cheese
• 8 oz cream cheese
• 1 cup milk
• 1/2 tsp pepper
• Method:
1. In a saucepan, combine butter, cream cheese, milk, parmesan, and garlic. Cook on low until melted, stirring occasionally.
2. Season with pepper. Add cooked chicken or broccoli if desired.

3. Vegan White Alfredo Sauce
• Ingredients:
• 1 cup cashews
• 3/4 cup water
• Salt and pepper to taste
• Dried herbs to taste
• 2 tbsp vegan parmesan or nutritional yeast
• 2 garlic cloves
• 1½ cup chopped onion
• 1½ tbsp lemon juice
• Method:
1. Soak cashews in water overnight or for 8 hours. Drain and blend with the other ingredients (salt, pepper, vegan parmesan, onion, garlic, lemon juice, and water).
2. Blend into a smooth paste and season with dried herbs.
4. Alfredo Sauce with Heavy Cream
• Ingredients:
• 1/2 cup butter
• 2 garlic cloves, minced
• 2 cups heavy cream
• 1/4 tsp white pepper
• 1/4 tsp salt
• 1 cup grated parmesan cheese
• Method:
1. Melt butter in a medium saucepan over medium heat. Add garlic, cream, pepper, and salt. Bring to a low boil, then simmer for 8 minutes.
2. Remove from heat and slowly stir in parmesan. Return to low heat and cook for 2-3 minutes, stirring constantly.

• Ingredients:
• 4 tbsp unsalted butter, cubed
• 3 oz freshly grated parmesan cheese
• 8 oz homemade or store-bought pasta
• 1/2 cup hot pasta water
