Potato Roll Stuffed with Ground Beef and Cheese
Ingredients:
For the Potato Base:
• 4 medium potatoes, grated
• 2 eggs
• 3 tablespoons flour
• Salt and black pepper to taste
• 1/2 teaspoon paprika
• 1/2 teaspoon garlic powder (optional)
• 1 cup shredded cheese (mozzarella or cheddar)
For the Filling:
• 300g ground beef
• 1 small onion, finely chopped
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 2 garlic cloves, minced
• 1 teaspoon paprika
• 1/2 teaspoon cumin
• Salt and black pepper to taste
• 2 tablespoons olive oil
• 1/2 cup additional shredded cheese
Instructions:
1. Prepare the Potato Base:
• Grate the potatoes and squeeze out excess liquid using a clean kitchen towel.
• In a bowl, mix the grated potatoes with eggs, flour, salt, pepper, paprika, and garlic powder.
• Spread the mixture evenly on a baking sheet lined with parchment paper.
• Bake in a preheated oven at 180°C (350°F) for 20 minutes until set and slightly golden.
2. Prepare the Filling:
• Heat olive oil in a pan and sauté the chopped onion until soft.
• Add the minced garlic and cook for 1 minute.
• Add the ground beef, breaking it apart, and cook until browned.
• Stir in the diced bell peppers, paprika, cumin, salt, and black pepper. Cook for another 5 minutes.
• Remove from heat and let the mixture cool slightly.
3. Assemble the Roll:
• Take the baked potato base out of the oven and evenly spread the beef mixture over it.
• Sprinkle shredded cheese on top of the filling.
• Carefully roll the potato sheet into a log, using the parchment paper to help.
• Place it back on the baking sheet, brush with a little olive oil or melted butter, and sprinkle extra cheese on top.
4. Bake and Serve:
• Bake at 200°C (400°F) for 15-20 minutes until golden brown and crispy.
• Let it cool for a few minutes, then slice and serve warm.
