Ingredients:
• 4 medium sweet potatoes
• 1 tbsp olive oil (15ml)
• 1 small onion, chopped
• 1 red bell pepper, diced
• 1 (15 oz) can black beans, rinsed & drained (425g)
• 1/2 cup corn (frozen or canned, drained)
• 1/2 cup salsa
• 1/4 cup cilantro, chopped
• 1 tbsp chili powder
• 1 tsp cumin
• 1/2 tsp garlic powder
• Salt & black pepper, to taste
• 1/2 cup vegan cheese, shredded (optional, for topping)
• Vegan sour cream (optional, for topping)
Instructions:
1️⃣ Bake the Sweet Potatoes:
Preheat oven to 400°F (200°C). Scrub sweet potatoes clean and pierce with a fork multiple times. Place them on a baking sheet and bake for 45-60 minutes, or until fork-tender.
2️⃣ Cook the Black Bean Filling:
While the sweet potatoes bake, heat olive oil in a large skillet over medium heat.
• Add chopped onion and sauté for 5 minutes until softened.
• Stir in red bell pepper and cook for another 3-5 minutes until tender.
• Mix in black beans, corn, salsa, cilantro, chili powder, cumin, and garlic powder.
• Cook for 5-7 minutes, stirring occasionally, until heated through. Season with salt and black pepper to taste.
3️⃣ Prepare the Sweet Potatoes:
• Once the sweet potatoes are done baking, let them cool slightly.
• Slice each potato lengthwise and gently scoop out some flesh, leaving a border to create a shell.
• Mash the scooped-out sweet potato flesh and mix it into the black bean filling.

• Fill each sweet potato shell with the black bean mixture.
• Top with vegan cheese, sour cream, and extra cilantro (if using).
