A creamy, melty twist on the classic grilled cheese—perfect for a quick lunch or snack!
Ingredients:
4 slices of bread (sourdough, whole wheat, or your favorite)
1 ripe avocado
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese
2 tbsp butter, softened
1 tbsp mayonnaise
½ tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
¼ tsp red pepper flakes (optional, for a slight kick)
¼ cup fresh basil or cilantro, chopped (optional)
Instructions:
1. Prepare the Avocado Spread:
In a bowl, mash the avocado until smooth.
Season with salt, pepper, and optional red pepper flakes.
Stir in chopped basil or cilantro for extra freshness. Set aside.
2. Make the Garlic Butter:
Mix softened butter, mayonnaise, garlic powder, and onion powder in a small bowl until smooth.
3. Assemble the Sandwich:
Spread the garlic butter mixture on one side of each bread slice.
Flip two slices over and spread the avocado mixture on the unbuttered side.
Sprinkle mozzarella and cheddar evenly over the avocado spread.
Top with the remaining bread slices, butter side up.
4. Grill to Perfection:
Heat a skillet or griddle over medium heat.
Cook sandwiches for 3-4 minutes per side until golden brown and cheese is fully melted.

Remove from heat, slice, and serve warm.
