Slow Cooker Apple & Herb Chicken Thighs

Ingredients
Main Ingredients:
* 6-8 Bone-in, skin-on chicken thighs
* 2-3 Large apples (Honeycrisp or Fuji work best), sliced into wedges
* 1 Red onion, sliced (optional)
* 1/2 cup Chicken broth or apple cider
* 2 tbsp Honey or maple syrup
* Fresh herbs: Thyme sprigs and rosemary
The Rub:
* 2 tbsp Olive oil or melted butter
* 1 tsp Garlic powder
* 1 tsp Smoked paprika
* 1/2 tsp Salt & Black pepper (to taste)
Instructions
* Sear the Chicken (Optional but Recommended): For that crispy golden skin seen in the photo, heat a skillet with a little oil. Season the chicken thighs and sear them skin-side down for 3-5 minutes until browned.
* Layer the Slow Cooker: Place the sliced onions (if using) and half of the apple wedges at the bottom of the slow cooker.
* Add Chicken: Place the seared chicken thighs on top of the apples.
* Whisk Sauce: In a small bowl, whisk together the chicken broth (or cider), honey, and any remaining spices. Pour this around the chicken (not directly on the skin to keep it crisp).
* Add Herbs & More Apples: Tuck the remaining apple wedges and fresh herb sprigs around the chicken.
* Cook:
* Low: 5–6 hours
* High: 3–4 hours
* Final Touch: If you want the skin even crispier after cooking, you can pop the thighs under a broiler (grill) for 2-3 minutes before serving.
Serving Suggestion
This dish goes perfectly with mashed potatoes or wild rice to soak up the sweet and savory sauce.
