Hearty Vegetable Soup Recipe
Ingredients:
• 3 small potatoes, peeled and diced
• 1 medium zucchini, chopped
• 1 large carrot, sliced
• 1 small onion, chopped
• A handful of fresh parsley, chopped
• 2 tablespoons olive oil
• 1 teaspoon turmeric
• 1 teaspoon cumin seeds (optional)
• 1 liter (4 cups) vegetable broth or water
• Salt and black pepper to taste
Instructions:
1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent.
2. Add the remaining vegetables: Stir in the potatoes, carrots, and zucchini. Cook for 3–4 minutes, stirring occasionally.
3. Season the soup: Add turmeric, cumin seeds, salt, and black pepper. Mix well to coat the vegetables with the spices.
4. Simmer: Pour in the vegetable broth or water. Bring to a boil, then reduce the heat and let the soup simmer for 20–25 minutes until the vegetables are tender.
5. Finish and serve: Stir in the chopped parsley, adjust the seasoning if needed, and serve hot.
