A hearty, flavorful one-pan meal! Juicy sausages, tender potatoes, and caramelized peppers and onions come together in this easy, comforting dish. Perfect for a fuss-free weeknight dinner!

🛒 Ingredients:

2 tbsp olive oil

2 large onions, sliced into wedges

2 red bell peppers, deseeded & cut into large chunks

2 garlic cloves, chopped

1 tbsp fresh thyme leaves, chopped

500g (1 lb 2 oz) baby new potatoes, halved

12 sausages, pricked with a fork

🔥 Instructions:

1️⃣ Prep & Preheat

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Assemble the Dish

In a large bowl, toss onions, peppers, garlic, thyme, and potatoes with olive oil, salt, and pepper.

Spread the mixture evenly on the baking sheet.

Nestle the sausages among the veggies.

3️⃣ Roast to Perfection

Bake for 35–40 minutes, flipping the sausages halfway through.

Cook until the sausages are browned and the potatoes are tender.
