Pepperoni Pizza Lasagna Roll-Ups
A fun twist on classic lasagna, these roll-ups are packed with cheesy, pepperoni goodness and easy to make!
Ingredients:
12 lasagna noodles
1 ½ cups ricotta cheese
1 egg
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 ½ cups shredded mozzarella cheese (divided)
¼ cup grated parmesan cheese
30–40 pepperoni slices
2 cups marinara sauce
Fresh basil or parsley (optional, for garnish)
Instructions:
1. Cook the Noodles:
Bring a large pot of salted water to a boil.
Cook lasagna noodles according to the package directions, but slightly undercook them so they don’t tear (about 1–2 minutes less than the recommended time).
Drain and lay the noodles flat on a baking sheet lined with parchment paper or a clean towel to prevent sticking.
2. Prepare the Cheese Filling:
In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, garlic powder, salt, and black pepper.
Stir in ½ cup of shredded mozzarella cheese.
3. Assemble the Roll-Ups:
Spread 2 tablespoons of ricotta mixture evenly over each lasagna noodle.
Lay 3–4 pepperoni slices on top of the ricotta layer.
Carefully roll up each noodle and place it seam-side down in a greased 9×13-inch baking dish.
4. Add Sauce & Cheese:
Pour 1 cup of marinara sauce over the roll-ups.
Sprinkle the remaining 1 cup of mozzarella cheese and parmesan cheese on top.
Spoon the remaining 1 cup of marinara sauce over the cheese.
5. Bake:
Cover with foil and bake at 375°F (190°C) for 20 minutes.
Remove the foil and bake for another 5–10 minutes, or until the cheese is bubbly and slightly golden.
6. Serve & Enjoy:
Let the roll-ups cool for about 5 minutes before serving.
Garnish with fresh basil or parsley if desired.
