This hearty and comforting chicken stew is packed with tender meat, flavorful herbs, and wholesome veggies—perfect for a cozy meal!
Ingredients:
2 tbsp olive oil
1 ½ lbs chicken thighs, cut into 1-inch pieces
3 tbsp all-purpose flour
1 tsp dried thyme
1 tsp dried rosemary
½ tsp salt, plus more to taste
6 cloves garlic, minced
1 onion, diced
3 carrots, peeled and sliced
2 large potatoes, cut into ½-inch cubes (about 1 lb)
3 cups chicken broth
1 bay leaf
½ cup milk
1 cup frozen green peas
Black pepper, to taste
Instructions:
1. Prepare the chicken: In a large bowl, toss the chicken pieces with flour, thyme, rosemary, salt, and a pinch of black pepper until evenly coated.
2. Sear the chicken (optional but recommended): Heat olive oil in a pan over medium heat. Sear the chicken for 2-3 minutes until lightly browned. This step enhances flavor.
3. Assemble the slow cooker: Transfer the seared chicken to the slow cooker. Add garlic, onion, carrots, potatoes, chicken broth, and the bay leaf. Stir to combine.
4. Slow cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender and the chicken is fully cooked.
5. Final touches: Stir in the milk and frozen green peas. Cook for another 10-15 minutes until the peas are heated through. Remove the bay leaf.
6. Season and serve: Taste and adjust seasoning with more salt and black pepper if needed. Serve warm with crusty bread or over rice.
